One quick question…. Do I need to use SRX210H/H2 devices? I have a bunch of SRX210B/BE devices on the shelf in the office which I was hoping to use to build my lab.

I think those should work just fine. The difference between 210H (1G) and 210B (512) is the memory.

You should be fine with SRX100, vSRX, or just about anything that runs Junos. The only differences will be the interfaces you use on your device. You will also need some type of EX switch for the Layer 2 labs.
